Cottage Cheese Berry Bowls

Cottage cheese is high in protein and tastes even better when mixed into a creamy delight.  The crispy not topping provides an extra boost of protein.

Protein-Packed Snack

Ingredients: 1 (16 oz) box of ordinary cottage cheese.

     Zest from one orange
     2 teaspoons of vanilla extract.
     1/2 teaspoon of cinnamon.
     1 1/2 cups blueberries.
     1 cup chopped almonds or walnuts.

 Directions:

     Place cottage cheese, orange zest, vanilla, and cinnamon in a food processor or    blender container.
     Pulse a few times and then blend until smooth.
     Add blueberries and pulse a few times until barely combined.
     Put the mixture in a jar and chill.
     To serve, spoon a quarter of the beaten cottage cheese into a bowl and top with a quarter of the chopped nuts.
