1 c quinoa cooked with 2 c water
1 cup cucumber
1/2 c. parsley
1/2 c. mint
1/2 c. red onion
1/2 c. chopped pistachios (optional)
1 15 oz can of chickpeas, drained and rinsed
2 lemons, juiced (about 5-6 Tablespoons)
1/4 olive oil
Sea salt to taste
Pepper to taste
1/2 c. crumbled Feta cheese
Toss all ingredients together, serve cold
